Enchiladas de Mole
2 Enchiladas stuffed with shredded chicken and covered in a slow-cooked Oaxacan mole sauce that includes chocolate, roasted California pepper, roasted mulato pepper, peanut, garlic, roasted squash, and spices. Topped with queso fresco.

Ceviche
Ceviche is a chilled seafood dish in which raw seafood is marinated in lime or lemon juice, and the acid in the juice "cooks" the seafood (without any heat). Each ceviche dish is served with three freshly fried house-made tostadas.
Aguachile Negro (Black)
Ceviche tiger shrimp, cucumber, avocado, and red onion marinated in soy sauce*, Maggi seasoning, lime juice, garlic, and chile de arbol.

Quesadillas de Huitlacoche (Corn Mushroom)
Filled with huitlacoche and epazote.
Huitlacoche (pronounced like "wheat - la - ko - chay"), also nicknamed the "Mexican truffle," is a fungus that grows on corn under certain circumstances. Its flavor is lightly smoky and sweet, with the texture and meatiness of mushrooms. It has been cultivated since the days of the Aztec empire and is considered a delicacy in Mexico.

Chiles en Nogada
Often served on Mexican independence day, this is a fancy yet classic dish. It features a whole battered and fried poblano pepper stuffed with a lightly sweet filling of ground beef, garlic, raisins, almonds, peach, tomato, apple, and cream. The pepper is drenched in a creamy walnut sauce and topped with fresh juicy red pomegranate seeds and a sprinkling of parsley.
